Rosemary and Citrus Scallops

2 servings

 1/4 lb. scallops

 1/8 tsp crushed dried rosemary

 2 Tbsp. orange juice

 1/4 tsp. grated orange rind

 1 tsp butter

 Salt

Combine all ingredients except scallops and butter in a bowl. Add scallops and stir to combine.

Melt butter in a nonstick skillet over medium high flame. Remove scallops from marinade and cook until browned. Transfer to a plate.

Simmer marinade in skillet until thickened. Pour over scallops.

Chapter 6 - Poultry Dishes

Rice and Turkey Casserole

3 servings

 1 cup cooked chopped turkey breast

 1 cup boiling water

 2 Tbsp. chopped scallions

 5 oz. condensed cream of mushroom soup, non-fat

 3 oz. long grain and wild rice mix

 2 1/2 Tbsp. skim milk

Preheat oven to 350 degrees F. Combine all ingredients in 1 quart casserole and cover.

Bake for 35 minutes, or until rice is done. Uncover and bake for 8 minutes. Serve warm.
